Heat olive oil in a heavy Dutch oven. Season beef with salt and sear in batches until browned on all sides, then transfer to a plate.

In the same pot, add onions, garlic, and wild mushrooms. Cook for 6-8 minutes until mushrooms are soft and onions are translucent.

Stir in tomato paste, dark ale (deglazing the bottom of the pot), beef bone broth, fresh rosemary, thyme sprigs, and bay leaves.

Return beef to the pot, cover, and simmer on low for 60 minutes. Add diced potatoes and carrots, then continue simmering covered for 30 minutes until beef is meltingly tender.
